Banana Chocolate Chip Walnut Oat Bread

This is one of my favorite recipes, it’s a twist on the Joy of Cooking’s, bland and outdated banana bread. The rolled oats combined with the walnuts and chocolate chips enhance the texture and add a great flavor component. I like to go heavy on the walnuts and the chocolate (1 cup each) but I tamed it down for y’all. It’s great on its own, but I also like using it as a base for hot fudge sundaes.

The recipe is designed for a nine inch cake pan, if you are using a loaf pan you should cut the recipe by half.

1 1/3 C AP flour
1 1/3 C Rolled Oats

1 ts BS
1/2 ts BP

11 TB (room temp) Unsalted Butter
1 1/3 C Sugar

4 Lightly Whisked Eggs

2 Ripe Nanners
3/4 C Walnuts
3/4 C Chocolate Chips

1. Sift together the dry ingredients and set aside.

2. Whip together the butter and sugar until light and fluffy (about 2-3 minutes). Stopping to scrape down the sides of the bowl.

3. Add the flour mixture to the butter and sugar blend,

4. Slowly add in the egg mixture. Once incorporated remove bowl from the mixer.

5. Fold in the nanners, chocolate chips, and walnuts.

Pour in greased 9 inch cake pan and bake at 350 degrees for 45-60 minutes or until done.

Jessica the Hippo: Living Large in South Africa

The two animals I fear most in this world are badgers and hippos (the large ones not the pygmy ones). I do however make an exception for his lil lady. Meet Jessica the Hippo living large (no pun intended) in South Africa with caretakers Tonie and Shirley Joubert. The couple, rescued the young hippo shortly after birth from the banks of the Blyde River, during the devastating floods of 2000. Immortal Jellyfish

Immortal jellyfish? Yikes! The Turritopsis dohrnii unlike other jellyfish have the ability to revert back to a juvenile state in response to external stressors like starvation and physical damage. According to researcher Maria Pia Miglietta, of Pennsylvania State University, “The jellyfish turns itself into a bloblike cyst, which then develops into a polyp colony, essentially the first stage in jellyfish life. The jellyfish’s cells are often completely transformed in the process. Muscle cells can become nerve cells or even sperm or eggs.” This is well beyond a salamander regenerating its tale. This is an organism turning back the clock on a cellular scale and selectively activating and deactivating targeted genes. It is an evolutionary masterpiece.
