Banana Chocolate Chip Walnut Oat Bread

This is one of my favorite recipes, it’s a twist on the Joy of Cooking’s, bland and outdated banana bread. The rolled oats combined with the walnuts and chocolate chips enhance the texture and add a great flavor component. I like to go heavy on the walnuts and the chocolate (1 cup each) but I tamed it down for y’all. It’s great on its own, but I also like using it as a base for hot fudge sundaes.

The recipe is designed for a nine inch cake pan, if you are using a loaf pan you should cut the recipe by half.

1 1/3 C AP flour
1 1/3 C Rolled Oats

1 ts BS
1/2 ts BP

11 TB (room temp) Unsalted Butter
1 1/3 C Sugar

4 Lightly Whisked Eggs

2 Ripe Nanners
3/4 C Walnuts
3/4 C Chocolate Chips

1. Sift together the dry ingredients and set aside.

2. Whip together the butter and sugar until light and fluffy (about 2-3 minutes). Stopping to scrape down the sides of the bowl.

3. Add the flour mixture to the butter and sugar blend,

4. Slowly add in the egg mixture. Once incorporated remove bowl from the mixer.

5. Fold in the nanners, chocolate chips, and walnuts.

Pour in greased 9 inch cake pan and bake at 350 degrees for 45-60 minutes or until done.
